Ingredients
8oz self raising flour
2oz butter
1oz strong cheddar, grated
1 cup chopped fresh sea spaghetti (or rehydrated from dry)
1.5 cups chopped three cornered leek leaves
1/2 tsp smoked paprika
150ml milk
pinch of sea salt
Preparation
Preheat your oven to 220 degrees C (fan assisted). In a bowl, rub together the flour and butter. Add the rest of the ingredients except the milk, then pour in a little at a time until the mixture comes together. Work the dough until just combined. Roll out until about 2cm thick and cut out circles with a cookie cutter (approx. 5cm diameter). Brush a little milk on the tops and bake in the oven for 12-15 minutes until golden. You can use a food processor for this if you wish.
